This blueberry and yogurt baked oats is delicious and easy to make. Whether you are a child or an adult, this is a recipe that is filling and can be enjoyed as a breakfast or dessert. With Christmas just over and the possible weight gain that plagues my sleep; I have been looking for an alternative dish, you know something that’s easy but also a conventional shift from the regular old: ice-cream, chocolate, pies and/or cake. Something that I can eat without feeling annoyingly guilty about it afterwards. I recently found this recipe on eatsamazing and just had to try it. Truth is it tasted great too, I am a massive oats lover, as a person who is always on the go I often don’t have time for lengthy cooking. Still, I only really started enjoying oats once I discovered how delicious it was to mix my creamy oats with a tablespoon of Greek style yogurt, honestly, I felt a little annoyed when I realised just how amazing porridge can be – like I had been cheated out of something over the past 20 odd years. If you are looking for an easy breakfast/dessert combo try to recipe below- you can used any thick yogurt of your choice. I like Greek style yogurt because for me the others can a little too sweet at times.

Blueberry and Yogurt Baked Oats

Ingredients

  • 90g Yogurt ( I used Greek style)
  • 75g Oats
  • 75g Blueberries
  • 2 Eggs

Instructions

  1. Preheat oven to 200°C (Gas mark4/400°F)
  2. Measure the oats into a mixing bowl and crack in the egg, add the yogurt and stir well to combine all the ingredients.
  3. Add in the blueberries and stir in to combine and evenly distribute throughout the mixture (do this last to avoid breaking the blueberries).
  4. Divide the mixed between 3 - 4 oven oven proof ramekins (the mixture will rise so make sure there is space in each dish for swelling).
  5. Put the mixture in to oven to baked for 20-25 minutes. They should be baked though and golden on top.

Notes

Leave to sit for a few minutes and then serve with honey, syrup or nutella; (Lately I have been loving nutella with everything but squeezy honey works really well).
